Apple-Rhubarb Pie Recipe

I have a delicious recipe for all of that rhubarb you have growing in your yard right now. I am here today to share an apple-rhubarb pie recipe. Just in time for the Fourth tomorrow. This is something perfect to take to or serve at that BBQ you are going to tomorrow. 
What you'll need:
3 cups chopped rhubarb
2 peeled and cut apples
I added a few strawberries just because. You don't have to if you don't want to
1/2 cup sugar
1/4 cup flour
1 tablespoon cinnamon 
1 tablespoon lemon juice
1 pinch of salt
1 egg
1 tablespoon butter
I also used ready made crust but by all means make your own!
What to do:
Preheat your oven to 375
Combine the rhubarb, apples, strawberries, sugar, flour, cinnamon, lemon juice and salt in a bowl and mix and let sit for a couple minutes. 
Pour the filling in the pie.
Cut the butter in chunks and place on top of the filling.
Cover the pie with the remaining crust and coat with an egg wash. (Beaten egg with cream or water) and top with sugar.
Cover the edges of the pie with foil to prevent burning. 
Bake for 30 minutes, remove the foil and back for another 25-30 minutes. 
Let it cool and serve!
This is a very easy pie to make and delicious too! It is sure to be a hit at your next party. Serve it with ice cream for a cool twist.
